Eddie McBride<br \/>\nused with permission by The Bettina Network, inc.<\/p>\n<p>Bettina&#8217;s changes<\/p>\n<p>4 medium size sweet potatoes \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 organic sweet potatoes<br \/>\n2\/3 cup brown sugar \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 organic turbinado sugar<br \/>\n4 Tablespoons Corn Syrup \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic maple syrup<br \/>\n1 Can Condensed Milk \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 organic heavy cream<br \/>\n2 Eggs \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic eggs<br \/>\n4 Tablespoons Real Butter \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic butter<br \/>\n1 Teaspoon Ground Cinnamon<br \/>\n1\/2 teaspoon Ground Nutmeg \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 all spices organic<br \/>\n1\/4 Teaspoon Ground Cloves<br \/>\n1\/4 teaspoon Ground Ginger<br \/>\n1 teaspoon Pure Vanilla Extract \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0powdered organic vanilla<\/p>\n<p>1. \u00a0Cook the 4 medium-size sweet potatoes until you can drive a fork in smoothly. \u00a0Then de-skin the potatoes (while preheating the oven).<\/p>\n<p>2. \u00a0Preparing crust for pies: 1) Preheat oven to 400 degrees Fahrenheit. \u00a02) Let frozen crust thaw 10 to 20 minutes. Price bottom and around sides thoroughly with fork. \u00a03) Bake in oven for about 9 to 11 minutes or until lightly browned. \u00a0Cool. \u00a0Then&#8230;.Fill with Sweet Potato Mix.<\/p>\n<p>ed.note: If you prefer to make your own pie crust it would probably be better and healthier. \u00a0We have a recipe for one using organic flour in Bettina&#8217;s Cookbook.<\/p>\n<p>3. \u00a0Place Sweet Potatoes in bowl and blend with fork and electric blender, until smooth. \u00a0In large bowl, mix sweet potatoes and remaining filling ingredients with blender until blended thoroughly blended. \u00a0Pour mix into browned pie crusts.<\/p>\n<p>4. \u00a0Pre-Heat oven to 425 degrees Fahrenheit. \u00a0Bake for 15 minutes. Reduce oven temperature to 350 degrees; bake 30 additional minutes or until knife or fork inserted in center comes out clean. \u00a0However, if you are going to use the Streusel Topping, at this point, only cook for 15 Minutes before placing topping.<\/p>\n<p><b><br \/>\n<\/b><br \/>\n<b>Streusel Topping for Sweet Potato Pie<\/b> (optional&#8230;you don&#8217;t need to do this part)<\/p>\n<p>Bettina&#8217;s changes<\/p>\n<p>1\/2 cup packed brown sugar \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic turbinado sugar<br \/>\n4 Tablespoons Butter \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic butter<br \/>\n1\/2 Teaspoon ground cinnamon \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic cinnamon<br \/>\n1\/2 cup chopped Pecans \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic Pecans<br \/>\n1\/2 cup chopped Walnuts \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0 \u00a0organic Walnuts<\/p>\n<p>Mix above ingredients in a bowl. \u00a0Sprinkle Streusel over top of pie and bake for 15 to 20 minutes after Streusel Topping has been placed on pie or until knife or fork inserted in center comes out clean.<\/p>\n<p><b>Who is Eddie McBride?<\/b><br \/>\nHe is single, likes to eat and cooks out of necessity. \u00a0He has a very respectable collection of recipes &#8211; most however, need little tweaks to keep the body healthy &#8211; as we did above.<\/p>\n<p>He runs a non-profit corporation which works to help his community be its best self &#8211; primarily working with at-risk children. \u00a0It is a 501C3 organization.<\/p>\n<p>You can tell from this recipe that he is from the deepest south &#8211; note the whole cup of condensed milk and the pecans, even though there are a few New England walnuts spread around, probably from his time in the Northeast.<\/p>\n<p>Rev. McBride is currently working to bring MIT&#8217;s Fabrication Lab (the FAB Lab) to Mississippi, January thru March, to expose his community to this form of technology with the goal of establishing a permanent FAB Lab in his area.<\/p>\n<p>An MIT graduate and Harvard Divinity School student, Rev.
